Chicken Tandoori Naan Pizza June 21, 2012

Overall, I’d say this recipe was a success! There were one or two very small mishaps along the way but it tasted fine/ended up fine so clearly I didn’t mess up anything important. The biggest mishap was me forgetting me keys to my apartment which delayed me about 45 minutes.

Here are the onions. I thought that using the small half of the onion would be good since my naan slices were small but the smaller half didn’t turn out to be much at all. Next time, I’ll use more onions!

The chicken cooking in the tandoori paste/greek yogurt sauce. I accidentally put too much tandoori paste (okay okay so I put in a lot more than was needed) but it tasted fine in the end! Also, I only marinated the chicken for an hour (okay okay so 50 minutes) because I was very impatient so next time I’ll marinate it for longer. The sauce also didn’t thicken so I made a slurry of cornstarch and water to thicken the sauce. i accidentally overestimated the amount of cornstarch but it all turned out okay! It was actually a decent consistency for pizza. My mishaps were this recipe were actually very fortunate since they didn’t actually mess up the pizza.

I forgot to take a picture of the before but here’s the end result! Tandoori/yogurt chicken with sweet onions, mangoes, and shredded mozzarella cheese on top of whole wheat naan! So it doesn’t quite look like the blog that I got the recipe from but I think it’s close enough. I skipped the cilantro because I’m not a huge fan and I think next time I’ll add a little more cheese. I also overestimated the amount of mangoes I would need but I love mangoes so it’s all good.

All in all, it was quite delicious and It makes enough for two meals…. well 1.5. First recipe — success!! Let’s hope the next recipe goes just as well.

Back for realsies! June 14, 2012

My last post was ages ago and I’ve already established that I’m terrible at blogging. I’m many posts overdue but since I no longer have school (WOOOO!) I figured I would make one last attempt at reviving this blog. The title still holds true since I’m still in Providence and will be here until next June.

Now that I’m no longer in school, I really have no excuse to be lazy and sit around doing nothing so I’m also using this blog as a way to keep myself in check. For now: 

Long-term goals: 

  • Start playing music again
  • Travel
  • More regular exercise
  • Be more sustainable (eat mainly in season fruits and veggies)
  • Actually learn how to cook
  • Run a half-marathon
  • More crafts! 

Short term goals

  • Finish cross-stitch pillowcase
  • Go the whole length of the East Bay bike path
  • Make a new dish at least twice a month
  • Learn how to swim
  • Read a book every week and a half

Clearly this is a very ambitious list but it’s always good to aim high! I’m also going to try to update this blog every week and a half. Phew! I’m tired from just writing this list but let’s hope that I’ll be able to cross out some of the short-term things by the fall.
