Long Overdue Update: Yellow Curry and Fried Rice December 25, 2010

It’s been a while since I’ve last updated… like several months. Unfortunately, this is what happens to most of the things I start over the summer: I get really excited, then my excitement wanes, then I start school and then everything goes out the window. I should also change the title of my blog but I haven’t thought of anything clever or appropriate yet so I’ll leave that alone for now.

On to meals that I made over the summer but never posted!

First I made some yellow curry from a jar. It was perfect for me since it says it only takes 10 minutes which means that I only have 10 minutes to mess it up.

The end result:

It was a little bit watery but pretty good for curry in a jar and really easy to make so I would definitely get this again. I added zucchini, summer squash, chicken, and broccoli… I might have also added some onions but I don’t remember. I do want to try using curry paste but that requires buying coconut milk and stuff which I was too lazy to do… maybe I’ll attempt that next semester.

I also pretty much perfected my fried rice and I have to say — it actually looks decent! I used day old rice, soy sauce, those frozen mixed veggies and Chinese sausage (yum!).

The last thing that I made this semester that I have a picture of is spring rolls!

These had shrimp, pork, bean sprouts, romaine lettuce, and vermicelli noodles. The sauce was a slightly thickened hoisin sauce. I also made some stir fried tofu a couple of weeks ago, which was just tofu marinated in soy sauce and garlic, and then stir fried in some sesame oil and olive oil with a little bit of peanut butter and sesame seeds on top.

In other non-cooking news, I’ve been really bad about running lately… I stopped a super long time ago 😦 I’m definitely going to start up when I’m at home though — probably after I get out of this lazy phase. I still plan to run that half-marathon in May. At some point at the end of the summer, I got up to at least 6 miles which is almost halfway there so at least I know I can do this!

On Monday, I’m going to be baking the Chinese bakery cake — the one that looks like this:

Except, mine won’t look as fancy and I’m pretty sure it’s going to be a hot mess since I’ve never baked anything from scratch and this recipe probably isn’t the easiest one ever.

Also, on a completely unrelated note — I hope there’s not too much snow tomorrow night. I hate shoveling.
